Enjoy these easy Baking recipes using Matcha Green Tea Powder
MATCHA LEMON ICED CUPCAKES
GLUTEN FREE
For this recipe Christine used Matcha powder from Matcha Yu. These cupcakes are best made in a silicon muffin tray or inside unbleached paper patties because the batter is quite sticky.
Ingredients:
½ cup Coconut flour
2 tsp Everyday Matcha powder
1 tsp lemon zest
4 eggs
½ cup raw honey
⅓ cup coconut oil
2 tbsp water
½ tsp baking powder
½ tsp bicarb soda
½ tsp apple-cider vinegar
¼ tsp Himalayan pink salt
1 tsp pure vanilla extract
Icing
100g unsalted butter, softened
3 tbsp granulated stevia
200g cream cheese, softened
2 tsp Everyday Matcha powder
Method
Preheat oven to 150ºC.
Combine all cupcake ingredients in bowl and whisk until very well combined.
Spoon into 12-hole silicon muffin tray (or into unbleached paper patties) and bake for 18 mins, until lightly browned. Allow to cool completely.
Meanwhile, to make icing, ass cream butter and stevia in stand mixer, then add cream cheese and matcha powder and beat until well combined. Chill for 10–15 mins if too soft, or wait until cupcakes are completely cold then ice and serve.

Using matcha to create this amazingly moist bittersweet bread!
Helps to calm and relax your mind/body as well as in sustaining energy up to 6 hours.
The L-Theanine found in matcha boosts brain power, memory and thus improves on your learning abilities.
Ingredients:
2 cup of gluten-free flour
2 tsp of matcha powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp pink salts
2 ripe bananas
2 tsp vanilla extract
1/2 cup brown rice syrup
1/4 cup maple syrup
1 tbsp lemon juice
1 flax egg (mix 1 tbsp flaxseeds + 3 tbsp water)
3/4 cup light olive oil
Bake at 350F (175C) in oven for about 50-55 mins.

MATCHA TAHINI COOKIES
VEGAN & GLUTEN FREE
Ingredients:
1 cup of almond meal
1 cup of pistachio meal
3/4 cup Tahini
1/2 cup maple syrup
1 tbsp of matcha
1/2 cup of cacao nibs
2 tsp vanilla or almond extract
1/2 tsp sea salt
Method:
Mix everything together and make cookies at 160 degrees Celsius for 10 minutes!
